Big News!

As some of you already know, I’ve been wanting to go on a backpacking trip for a long time now.

Well, I am excited to say that I will be going to southeast Asia in three weeks! I will be spending 3 months (101 days) traveling all through Thailand, Cambodia, Laos, Indonesia and Vietnam.

It will be such an amazing trip and I am so thankful that I have the opportunity to go. I plan to spend most of my time taking in the wonders of Asia, eating their awesome food, volunteering in the community, and taking a break from college.

I haven’t posted in a while because apart from having to prepare for my trip I am finishing off my sophomore/junior year of college (technically I’m both here in NZ because my degree is only three years).

I hope to keep updating you guys on my trip as it progresses!

I Surrender

This past weekend I was on a solo, two hour drive home when I poured my heart out to God. I’ve been struggling lately with putting in the effort to spend time with Him. While I was praying I realized that I always find a way to put things before Him. It’s easier to watch a t.v. show than spend time in prayer. It’s easier to spend meaningless hours scrolling through Facebook and Instagram than delve into the bible. At least that’s how it’s felt for me.

While I was in the car, listening to a christian radio station, a song came on with a verse that said “do they see you when they see me”. I decided that I needed to change my priorities. My life does not project my faith. Maybe in some aspects it does, but that is not what I want. I want every part of my life to show that I am a believer in Christ.

So I am trying to keep a conscious mind on the activities that I choose to fill my day with. Psalm 101:3 says: “I will not set before my eyes anything that is worthless…”. I am trying to constantly remind myself of this. I am choosing to fill my life with meaningful occupations rather than pointless ones. It’s a constant battle between me and earthly desires. The devil sure knows how to tempt me, but I have God as my armour and I will not give up.

I’m learning to let go of my expectation for my life enough to let the Lord guide me down the one he has planned for me.

Nail Polish Collection


I recently organized my nail polish box as it was beginning to look like a rainbow vomited in it. Her it is all organised by color! Looks so prettyyy.

Can you believe that at one point I had about double this amount? Phew… I don’t know how I ended up with so many.. wait I do.

I became a nail polish addict at 12 and from then on everyone knew it and fed that addiction. I don’t know if I should thank them or not. I just know I don’t have nearly as much time to do my nails as I did four years ago!

Spring Tacos

Today was the first day of spring in New Zealand! Auckland was blessed with some over all nice weather for a change 🙂

For dinner I made vegan tacos; unfortunately they were not the traditional carne asada, but they were still pretty darn good!


I started off by making some wholewheat tortillas (rolled out small).

Then I made some guacamole which consisted of: one mashed avocado, some chopped cilantro, some minced onion, plenty of lemon juice and a bit of salt.

As for the rest of the filling: kidney beans, spinach leaves, shredded carrot and some hot sauce

They aren’t you’re typical Mexican tacos, but this minimal ingredient dinner was really good!

Homemade Vegan Burger

So a couple nights ago I thought I’d make myself a burger for dinner, and guys, it came out super good!

I loosely followed this recipe and added other ingredients IMG_1847 IMG_1846

This is what went into my patties:

Mushed chickpeas
Chopped cilantro
Shredded Beets
Shredded eggplant
Lemon juice
Salt & pepper
Chopped mushroom
Minced White onion
Wholemeal flour (only enough to thicken)
Wholewheat bun
Then I put some sweet chilli sauce on one bun and pumpkin and kumara hummus on the other then I added some salad mix and spinach.
The amount I made is enough for about 5 medium patties.
I know, I know it sounds really loaded, but it was SO good!

I totally recommend you make this and even try my adaptation of it!

Ever since I first started this blog I think I have changed the layout a minimum of 15 times. I can’t commit to one look! I like it for a bit then I feel the need to change it. I am no expert in how to layout a website so I have had so much trouble portraying the way I’d like it to look! Bare with me and that constant change please…
